OMG Blondies!

Ridiculous how simple this is. No, really. First, kudos to Megan at Detoxinista . Her fabulous recipe got me thinking anything is possible. Of course this time of year, anything is possible. :) So, the key to all of this is going to be the ingredients. I need to stress that. I can't vouch for what I don't use. And again, for those who do not know me, I know nothing about diet, nutrition, health other than my own personal road well travelled. Through Diabetes and Heart Disease and the FDA's goddamn food pyramid that nearly killed me. So. Back to food. I love food. I live for food. And my kids. And my husband. The cookie vs the cookie dough. Tough decision

Halloween. The demon word for diabetics. I get to dole out candy to about 100 little ghouls, princesses, warlocks, space invaders... everyone but me. I was going to make my own Almond Joys... and I could... but I totally spaced it off and didn't have the almonds. Please... Almond Joys without Almonds? Might as well have a Mounds. If you're finished snickering.... again, it's Halloween and candy is just everywhere. Even my fingers can't help typing those nasty words. So I thought what can I do? I need something to get me through. I need a fix. I need... cookies. but finding a cookie recipe made with Almond Flour is nearly impossible... unless you can use chocolate chips. Would someone please explain the purpose of using Almond Flour for a low carb healthy grain free cookie and throwing commercial chocolate chips in???? Low Carb Lemon Bars even my grandmother would love.

I pulled out my grandmother's lemon bar recipe, courtesy of my sister who keeps all these things. One look gave me the heeby jeebies. 2 CUPS of sugar. And of course that wonderful butter pastry crust. So, absolutely not going with Almond Flour on this one. Sorry, but I could not fathom making a mockery of something my taste buds have always had a soft spot for. And hubby not liking coconut, which is of course the perfect choice, left me in a quandary. You can't make a half-assed Lemon Bar. So I went with the coconut anyway. Hubby's not the diabetic one, so he can live with it. I am only sharing this recipe because I've changed it enough that it isn't actually my grandmother's anymore, and I also assume... rather this is an educated guess... she got it from a cookbook anyway. Sliced into 1/2" strips. I made 12.  Take 1 cup of Chickpea Flour divided into 2 bowls, 1/3rd in one, 2/3rds in the other. In between these two bowls, place a bowl with one beaten egg.
